Turmeric Chicken Meatballs with Fingerling Potatoes

Ingredients

  • 1 pound tricolor fingerling potatoes
  • 1 white onion, cut into large chunks
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 pound lean ground chicken
  • 1 teaspoon ground turmeric
  • ½ teaspoon ground ginger
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons fresh parsley and parsley for garnish
  • 1 egg
  • 1 tablespoon packed coconut flour

  1. Preheat oven to 400F. Line a large baking sheet with parchment paper. Add potatoes, oil. Garlic, and seasoning, toss and bake for 20 minutes. After 20 minutes smash the potatoes then continue to bake for another 20 minutes until browned and crispy.
  2. While potatoes are baking, In a large bowl combine all ingredients listed above mixing well with your hands until all ingredients are combined.
  3. After potatoes have come out of the oven, give them a stir and make room to place the meatballs.
  4. Using a cookie scoop, to scoop meatballs onto baking sheet ( you should get about 12 meatballs). Bake for 18-25 minutes, until meatballs are fully cooked.
