Ube Donuts With Coconut Glaze

Ube Donuts With Coconut Glaze


  • 1/4 cup vegetable oil
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 tsp Ube paste
  • 1 1/4 cups powdered sugar
  • 4 tbsp coconut milk
  • 1 tbsp milk
  • 1/4-1/2 tsp Ube extract (depending on taste)
  • 1/2 cup unsweetened shredded coconut

  1. Preheat oven to 350 degrees.
  2. Spray donut pan with nonstick spray.
  3. Mix together oil, buttermilk, eggs, sugar, salt, baking powder, and ube extract until combined.
  4. Stir in flour and mix until smooth. Use a piping bag to pipe into the donut pan to about 3/4 full
  5. Bake donuts for 10-12 minutes
  6. Remove from oven, let cool for 5 minutes, then remove donuts from pan.
  7. While they cool make the glaze by whisking together the powdered sugar, milk, and ube extract.
  8. Once cooled, dip each donut halfway into the glaze and place it on a wire rack to dry. Sprinkle with coconut flake if desired.
