Combine softened cream cheese with the 1 tablespoon powdered sugar.
Add Atkins Nutritional Vanilla Latte Iced Coffee Shake to the cream cheese mixture and beat until smooth.
Beat the heavy cream and the 2 tablespoons powdered sugar in a mixer to make whipped cream.
Combine the whipped cream and the vanilla latte cream cheese and put into a large piping bag.
Cut one ladyfinger down the middle in half and dunk into coffee to soak into the cookie. Then place in the bottom of your serving cups. Repeat until 6 jars are filled.
Pipe half of the cream cheese mixture over all of the lady fingers then top with more halved ladyfingers, dunked in coffee and top with remaining cream cheese mix.
Garnish the tops with cocoa powder.
Place in the fridge at least an hour to allow the moisture to absorb into the ladyfingers and for the mousse to firm.
