Broccoli Flatbread:
  • 1 large head of raw broccoli
  • 1 cup almond flour / ground almonds
  • 4 eggs
  • 1 teaspoon dried herbs of choice (oregano, thyme, lemon pepper), optional

Beet Flatbread:
  • 1 small head of raw cauliflower, including the stem
  • 2 medium raw beetroots, peeled
  • 1 cup almond flour / ground almonds
  • 4 eggs
  • 1/2 teaspoon sea salt and black pepper
Carrot Flatbread:
  • 1 small head of raw cauliflower
  • 1 large raw carrot, peeled
  • 1 cup almond flour / ground almonds
  • 4 eggs
  • 1/2 teaspoon sea salt and black pepper

Quick to make flatbreads with just three ingredients, and you will have a soft, colorful flatbread as a result. For this recipe, you only need mixed vegetables, crushed almonds, and eggs. For the green flatbread, we have broccoli and carrots or beetroot for the orange and purple or red flatbreads.

You can use different vegetables and mix them to get the colored flatbread of your choice. Almond flour which adds sweetness to the mix and for allergic to nuts, chickpea flour can work as a replacement for it. Flatbreads are great for quick and easy recipes and dishes. From making sandwiches, mini pizzas, or any other recipe.

These veggie flatbreads are a good way to eat your vegetables and having them stack in your fridge can be a life savior when trying to make a quick meal. For the broccoli flatbread, we can make up to 12 slices. A head of raw broccoli as the main ingredient, almond flour, 4 eggs, and dried herbs (oregano, thyme, lemon pepper) an optional ingredient. And salt and pepper to taste and season.

Easy to make by just following the instructions, choose your favorite vegetables, and mix them well or you can choose other vegetables to add rich colors to your mix and get a nice looking flatbread.   1. Get the oven ready and preheat it at 400 Fahrenheit degrees, blend the broccoli with vegetable rice, almonds and salt, and pepper. If using dried herbs this is the moment to add them too.
  2. Mix everything with the hands and add the eggs in a center, whisk them with a fork, combine all ingredients and make a ball with it.
  3. Flat the dough and bake it for 25 minutes or until gold and firm. Let it cool and cut into bread size slices and store it in the fridge.
  4. For the beet flatbread, for main ingredient, use a raw cauliflower and 2 raw beetroots. Use the same instructions, blend main vegetable in a food processor or blender. Add the eggs, almond flour and salt, and pepper.
  5. Then mix it with the hands, make a center in it to place the eggs, whisk and blend till have the dough. Bake it and leave it for 25-30 minutes.
  6. And for the final flatbread, use a carrot to get that orange color, here use cauliflower, a raw carrot, and the same ingredients. Eggs, almond flour and salt, and pepper. Carrot and beet flatbread dough are moister than the broccoli one but they dried up when baked.
