  • 3 cups shredded zucchini
  • 1 ½ cup granulated sugar
  • ⅔ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 4 large eggs, room temperature
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 cup of chocolate chips
  • ½ cup chopped walnuts

  1. In a large mixing bowl add the flour, sugar, baking powder, pinch of salt, cinnamon, and nutmeg.
  2. Mix until combined and stir in the wet ingredients: shredded zucchini, vegetable oil, vanilla extract, and eggs.
  3. Mix until combined and smooth mixture develops.
  4. Stir in the chopped walnuts and chocolate chips and mix again.
  5. Transfer the mixture into a well-greased loaf pan lined with parchment paper and bake the zucchini bread for about 50 minutes in an already preheated oven at 350 F or 180 C degrees.
  6. Let the Zucchini Bread cools completely before serving.
  7. Enjoy.
