- 1 small can corn
- 1 zucchini, diced into small cubes
- 1 chili, diced
- 2 tablespoons parsley, chopped
- 2 spring onions, diced
- 1 avocado, diced into cubes
- Juice of 1 lemon
- Salt and pepper to taste
- In a large mixing bowl add the drained can of corn, diced zucchini, chili, parsley, spring onions, diced avocado, juice of a lemon and salt and pepper to taste.
- Mix until everything is combined and let the salsa chill in the fridge for 15 minutes.
- Serve cold and enjoy.
