Our recipe uses chocolate cake and ice cream, but feel free to mix and match any flavors you want. As a tasty bonus, you can spread frosting, fudge topping or anything else you want over the top of the cake. All Recipes recommends beating a quart of plain vanilla ice cream in your mixer until it is smooth and using it to frost the cake. It's that easy.
Here is the devilishly easy chocolate ice cream cake recipe, courtesy of All Recipes:
Prep: 20 minutes Cook: 30 minutes Ready In: 3 hours
1 (18.25 ounce) package chocolate cake mix
1/2 gallon chocolate ice cream in a square container, softened
Optional: 1 quart vanilla ice cream for frosting
Prepare cake according to package directions; bake in a 9x13 inch baking dish and cool completely.
Use ice cream that comes in a rectangular carton. Remove the carton and, using a piece of string or dental floss, cut the ice cream in half lengthwise (long side to long side) and place the two layers side by side on a piece of waxed paper.
Place the cooled cake over the ice cream. Using a knife, trim the cake and ice cream so that the edges match. Use a spatula or knife to smooth out the ice cream slabs and cover the seam.
Place a board or serving platter over the cake, hold onto the waxed paper and board, and flip the ice cream cake over. Remove the waxed paper and smooth out the seam between the ice cream slabs.
Cover with waxed paper and freeze until very firm. Decorate as desired.
